Get a pic of his face/body and try to model the appearance as best off of that.
For stats, put alot of it into his punches, power, hand speed, while putting little into his kicks, and just a little into his ground game.
Make his style either Boxing/Wrestling or Boxing/BJJ.
What I really suggest is save up and buy UFC Undisputed 2010, since Kimbo is already featured in the game. It comes out May 25th.
